They pick a time
Times that are actually free, worked out the moment they ask — not a grid built last night. A table for two is never held back because a party of six might turn up.
They leave a name
Name, email, phone, and anything you should know. Four things. No account, no password, no app to install, and nothing to remember next time.
They get a reference
Eight characters they can read down the telephone when they ring to change it — not a line of hexadecimal. Cancelling needs their email as well, so a forwarded confirmation is not a way in.
Your page wears your colours. You pick one colour and whether the page is light or dark — or point us at your website and we read them off it. We work out the rest, including whether text on your colour should be black or white, which is the thing most likely to end up unreadable. Type, spacing and corners are never yours to change, which is why the page always looks deliberate.

Everything a person can do here, an assistant can do too, because they call the same thing. Most booking systems bolted an API on afterwards. Here it is the only way in.
You can tell who did what
Every change records whether a person or a machine made it, proved by the key that was used rather than claimed. When an assistant starts taking your bookings, that stops being academic.
Money always waits for you
Refunds, deposits and charges are never automatic. Software can prepare them and will chase you about them. A person commits them.
